Mandif Warokka s first inspiration was his mother s cooking. He started his career working as station sous-chef at the Al Raha Beach Hotel in Abu Dhabi, before moving to the Desert Palm. He then travelled to Europe where he worked at Schloss Elmau Spa and Resort and Eisvogel in Bierkenhof, Germany, before moving back to Indonesia to work as sous-chef at Ju-Ma-Na restaurant at Banyan Tree Ungasan in Bali. He then opened his own restaurants, the Teatro Gastroteque and Blanco par Mandif, Indonesian restaurants based on local ingredients prepared with passion and great precision.
