Néstor Toapanta is the executive chef of the Marcus teaching restaurant at the culinary school of Quito, part of San Francisco University of Quito. He oversees the gastronomic concepts designed by the school s Culinary Arts students. Thanks to his father, he developed a passion for cooking at a very young age. After studying at the San Francisco de Quito University, he travelled to France to continue his training at the Institut Paul Bocuse in Lyon. Néstor Toapanta is currently working with Ana Teresa Pérez, a professor at San Francisco de Quito University, on a compilation of recipes served at the Marcus teaching restaurant.
