WHAT STATE OF MIND SHOULD A MEMBER OF THE TASTING JURY HAVE?
I think it is important to bear in mind that you have to be as neutral as possible when judging the dishes, starting on a blank page at each time. This requires concentration and some practice too, as the tasting concerns 12 dishes in 2 hours or so.
WHAT DO YOU EXPECT TO FIND IN THE CHEFS CREATIONS?
A purity of taste. For me this is key. When we were in Tallinn for the European selecting event of the Bocuse d Or, the chefs who successfully managed to deliver purity finished among the first.
The best creations boasted the purest flavours with a near- perfect balance.

Focus your work foremost on the taste. Combine this with a great attention to detail and balance and you ll have a chance of winning the contest on D-day.
