As an unprecedented tribute to chefs who have always been an essential link in our society, the Bocuse d Or IOC has naturally decided to place its international network and the candidates creativity at the service of the take-away format. On the programme: starter / main course / dessert with cherry tomato, a seasonal product of the land available in more than 170 countries. The take-away test will also highlight shrimp, that the chefs will prepare with the cherry tomatoes in the main course. The 3 recipes will be presented in a specific box container developed by the candidates using materials of vegetal origin, that will also need to be reusable.
Thanks to their ability to adapt to an environment that has been upended by the health crisis, chefs across the globe are striving to accelerate the diversification of gastronomic restaurants.
WHY INTRODUCE A TAKE-AWAY TEST?
We have all been through a difficult period and over the past months we have been faced with the take-away format in all its forms and shapes. We have had to adapt to the new requirements. To the members of the IOC it seemed therefore natural to introduce a test that reflected this mode of consumption. Completing this test within the allotted 5 hours will require a good dose of creativity! We have also added a double challenge: to work on the format and convenience of use, but also on the creation of a complete menu with a starter, main course, and dessert, a first for the contest!
WHY CHOOSE CHERRY TOMATOES AND SHRIMP AS THE IMPOSED PRODUCTS?
Exceptionally, this final will take place in early autumn, end of September, the optimal time for tomatoes. We wanted to promote a product that is known the world over, readily available, and offering a multitude of flavours, formats, colors... So, we chose this product that will present the candidates with quite a challenge. As for shrimp, we were looking for a complementary product for the main course, specifically a seafood product. And shrimp works well with cherry tomatoes, plus it is well-suited in terms of the convenience required by the take-away format.
